At Hawk and Horse Vineyards we are passionately dedicated to quality from the ground up. From the selection of our vines and vineyard site, to the most carefully detailed farming practices, we pay special attention to every aspect of the wine growing process. With soil and climate perfectly suited to growing Bordeaux varieties of world class distinction, we specialize in Cabernet Sauvignon.
Our wines are attentively hand-crafted from fruit grown on our own certified organic vineyard located in the Red Hills AVA. Our wines are created to bring forth the truest expression of our exquisite terroir. French Oak Barrels are selected from top quality coopers to perfectly compliment the style of each vintage. Welcome to Hawk and Horse Vineyards. We proudly announce the release of our inaugural vintage: our 2004 Cabernet Sauvignon.
2004 CABERNET SAUVIGNON - $65 per bottle
Marked by flavors of Black Cherries and Cassis, our 2004 Cabernet Sauvignon is a brilliant ruby red in the glass. Soft luscious tannins and just the right balance of acidity make this wine extremely food friendly and accessible. We produced only 42 cases of this extraordinary wine.

Technical Notes: Made from 100% Cabernet Sauvignon from our fifteen acre organic hillside vineyard. This wine was aged in new Marchive French Oak Barrels for 20 months before bottling, 13.5% alcohol.
2005 CABERNET SAUVIGNON - $65 per bottle
Showing deep rich color and soft dusty tannins this Cabernet Sauvignon is highly scented of rose and chocolate. Sure to be another winning vintage.
Technical Notes: Made from 100% Cabernet Sauvignon. Five hundred cases produced.

2006 CABERNET SAUVIGNON
This is our most deeply colored and highly complex vintage to date. Winemaker, George Bursick, is already hailing it as the best Cabernet Sauvignon he has produced. Cold-soaked and fermented in small tanks for maximum extraction, this wine is sure to be extremely cellar worthy.
Technical Notes: Fermented in small stainless steel tanks. This wine will be aged in a combination of new and used French Oak. Five hundred cases produced.

2006 CABERNET BLUSH
This dry blush is perfect for lighter fair. Made from 100% Cabernet Sauvignon which was allowed minimal contact with the skins, this delightful blush is a brilliant pink topaz in the glass. Fun and food friendly. Serve chilled. Only 42 cases produced.

2006 CABERNET SAUVIGNON PORT WINE
This vintage was so rich and flavorful we allowed a small amount of fruit extended hang time to create our first Late Harvest Cabernet Sauvignon. This wine is similar to a Ruby Port and is made from 100% Cabernet sauvignon. At harvest the fruit was beautifully sweet and flavorful. Early samples of this fortified wine are stunning! We are truly thrilled about this addition to our list of offerings.
